Bone marrow is the spongy tissue in the center of the beef bone. It has a rich, buttery and slightly sweet flavor with a smooth texture. It is often served along side toast, can be used as a base for soup or spread over roasted vegetables and meat dishes. It is very nutrient rich and considered by many as a super food.
The bone marrow packages average 1.2 pounds each. These are cut "canoe" style and are a real show stopper!
