Spring Creek Texas Beef flat iron steak, also known as a top blade steak, is a thicker, more dense cut of beef. When cooked properly, it is the second-most tender steak after the filet with flavor similar to a strip steak! It is a "new" steak that was discovered in the last few decades. 

The flat iron steak comes from the chuck. It has a more rectangular shape and is extremely tender and full of flavor.  It is best cooked on a grill or smoked and served medium rare. The flat iron is very similar to other flat steaks and therefore it can be used in recipes calling for flank or skirt steaks!
