The mock tender, also known as the chuck tender, is a cut of beef from the back of a steer. It's shape is similar to a tenderloin but the texture can be quite chewy. This lesser-known cut is cooked as a roast and ideally served thinly sliced, or it can be used in soups or stews. It is ideal when smoked and used on a charcuterie board!
